Southern Fried Turkey
What You Will Need: 1 Tall Frying Pan 1 Turkey Rack to hold turkey in oil 1 Hook for the above turkey rack Propane Heating Unit 3 Gallons Peanut Oil 1 Turkey 12-14# Range (Remember size of the turkey!) Thermometer 1 Large Oven Bag 1 Package Barzi Fried Turkey Seasoning Oven Mittens
Day Before: The turkey must be fully thawed before cooking. Rub thawed turkey with Barzi Fried Turkey Seasoning. Place in an oven bag and add the remaining seasoning in the bag. The juices of the turkey will combine with the seasoning to make a marinade that will soak into the turkey.
Return the turkey to the refrigerator and allow to marinate overnight.
Cooking: Pour peanut oil into the pot and be sure to allow enouth space for the turkey to be added without the oil overflowing. Bring the temperature up to 350 degrees and hold that temperature steady by adjusting the flow of propane to the flame. Very carefully, add the turkey to the hot oil. Warning: wear gloves to protect skin from oil that will be splattered when the turkey is introduced to the hot oil.
Temperature of the oil will go down when turkey is added so work with the flame to bring the temperature back to 350 degrees. It will be a slow process. Be sure not to overcompensate the flame or allow the oil to get hotter than 350 degrees. Allow turkey to cook 3-3.5 minutes per pound. When the turkey has been cooked, remove and allow to drain for a brief moment. Place turkey on a tray until cool enough to remove the turkey rack from the turkey.
Allow to cool 15-20 minutes before slicing.
