Barley Mushroom Soup
Prep time and cook time: About 1 hour
Makes 9 cups 6 servings
Ingredients:
½ pound Italian sausage
1 onion chopped
2 carrots half pound peeled and chopped
½ pound of fresh mushrooms rinsed and thinly sliced
1 oz of Barzi chilean mushrooms
1 ripe tomato chopped
6 cups of beef broth
¾ cup of dried Barzi Barley
1 package of frozen chopped spinach
Sour cream for garnish
Parsley for garnish
Salt & pepper
Brown the sausage in a frying pan . Add onion carrots, mushrooms, and
tomatoes and saute another 10 minutes. In the last five minutes, add barley
and toast.
Add broth. Add spinach. Bring to a boil over high heat stirring occasionally.
Cover, reduce heat, and simmer, stirring occasionally, until barley is
tender to bite, about 30 -45 minutes.
Ladle soup into bowls and add dollop of sour cream and salt and pepper.
Garnish with parsley.
